Here’s one of the recipes using my sour mangoes. I only had cod lying around in the fridge so that’s what I end up cooking. But I’ve tried the salsa on top of grilled salmon and shrimp before and it tastes just as good, if not better.
For the cod, season it with salt and pepper. Then throw it on a skillet and give it 3-4 minutes on each side until completely cooked through. Because the mango salsa will give it lots of flavor, there is no need to pre-marinade the fish.
Recipe for Mango Salsa
1 mango peeled and diced
1/2 small onion diced
1/2 green pepper diced
1 tomato diced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp honey
salt
pepper
chili peppers (optional)
Toss all ingredients together and stir. Serve on top of cod of choice of seafood.
